Varsam deasupra smantana si mai lasam cateva clipe pe foc repede amestecand. Inainte de a servi tocam marunt usturoiul ramas si il punem peste spanac.

Spanacul se spala bine. Separat intr-o cratita se pun 2 l apa la fiert, cand a dat in clocot se adauga spanacul si se lasa cca 5 minute sa fiarba. Separat se pune uleiul 30 ml la incins, se adauga faina si amestecam continuu. Punem acest continut peste spanac si mai lasam sa fiarba inca 5 minute. Cand este gata se ia de pe foc, adaugam sare si carnea prajita.

Pentru spanac cu usturoi si ochiuri spanacul se alege, se spala foarte bine in mai multe ape si se pune la fiert intr-un litru de apa cu putina sare. Se lasa la fiert cam 10 minute, la foc mic, se strecoara si se toaca marunt.

Intr-o craticioara se pune putin ulei cu cei 6 catei de usturoi taiati marunt si se prejesc. Se adauga apoi faina pana se prajeste si ea putin. Se adauga spanacul tocat, apoi laptele si dregeti gustul cu sare si piper. Se fierb toate 15 minute

Prajiti ouale ochiuri, cu putina sare si stropindu-le mereu deasupra cu uleiul din tigaie.

Bucata de kaiser se taie fasii de aprox i cm pe latime si se calesc usor intr-o lingura de ulei impreuna cu ceapa. Peste puneti kaiserul prajit impreuna cu ceapa,iar deasupra cascavalul ras. Intre timp, pregatiti sosul bechamel din nuca de unt ce o puneti la incins in olcica, puneti si faina cand untul s-a topit fara se se arda , amestecati, peste care turnati laptele. Presarati un praf de sare,piper cand incepe sa se ingroase, mestecati mereu la fund ca sa nu se prinda.

Cand ajunge la consistenta unei smantani mai groase, luati de pe foc, turnati deasupra compozitiei din tava cu grija, acoperiti toata suprafata si daca mai aveti , mai presarati putin cascaval ras. Dati la cuptorul incins cam la 200º cca 20 de minute sau pana se aureste deasupra.

Serviti imediat ca garnitura sau ca fel principal.

Se alege spanacul, se spala in cateva ape, se pune la fiert in apa cu sare se lasa sa dea cateva clocote si se strecoara.

Se toaca marunt, cu un tocator de genul astuia, pe care l-am folosit la chiftelutele mele de urzici

Se incalzeste uleiul intr-o cratita se dau cateii de usturoi prin presa de usturoi si se calesc pentru cateva secunde in uleiul incins, dar doar atat cat sa-si dezvolte aroma. Nu trebuie sa se maroneasca, pentru ca vor da un gust neplacut, amar, mancarii.

Se adauga imediat faina si se amesteca totul bine. Faina, insa, trebuie sa se rumeneasca un picut

Se stinge apoi cu lapte rece (nu adaugati toata cantitatea deodata, ci mai degraba jumatate). Lasati sosul alb sa fiarba pentru cca. 1 minut, dupa care adaugati spanacul tocat. Amestecati din nou, si adaugati, putin cate putin din laptele ramas (va opriti la consistenta dorita)

La final, daca vreti, puteti adauga o lingurita de zahar si una de otet sau suc de lamaie, dintr-o jumatate de lamaie.

800 gr spanac (eu am avut congelat, pen’ca nu-mi place ala la borcan cu gust de conservanti de-aia am ajuns la concluzia ca trebe 800 gr de spanac )

Se fierbe 2 minute, apoi se adauga verdeata.

Intr-un vas termorezistent sau emaliat uns se asaza un rand de spanac si unul din compozitia cu ciuperci.

Se repeta pana la terminarea ingredientelor.

Deasupra se presara verdeata tocata si se da la cuptor pana prinde putina coaja.
