(I got attached to the kombe dough and I use it for what I make with dough, such as pizza for example {so I took the copy-paste recipe from there, I hope no one is upset} - thanks Poca for the recipe)

it took

  • 350 ml milk
  • 100 ml water
  • 1 cube of 25 gr fresh yeast
  • 1 teaspoon salt (more topped)
  • 600 gr. normal flour

filling:

  • mushrooms,
  • cheese,
  • smoked case,
  • ham,
  • olive,
  • broth or vegetable (I made some with broth and others with vegetable)

RECIPE PREPARATION Pizza with mushrooms:

Put all the milk, water and crushed yeast in a bowl. Let the milk and water be warm

the milk with water and yeast is mixed and left for 15-20 minutes, it will not grow, do not panic. After 15-20 minutes, add the yeast mixture over the flour, sprinkle with salt and start mixing with a wooden spoon.

After that we start kneading (it can be done with a robot). Add about 50-100 grams of extra flour during kneading, the idea is to make a soft and elastic dough, not to stick to your hands.

Preparation Mushroom pizza

  1. Prepare the pizza dough according to one of the two chosen recipes: French bread dough or pizza dough. If you have already prepared another dough, for a pizza you need approx. 300-350 gr ready-made dough.
  2. The cheeses are grated. Peel the mushrooms and cut them into very thin slices (you can use this grater).
  3. Cut the dough into 3 pieces.
  4. Each piece is placed on baking paper (sprinkled with a little flour) and spread by hand a thin sheet of approx. 25 cm in diameter, leaving the edges a little thicker. Spread the dough by hand, taking care to remove as few air bubbles from it. Grease the dough with a little oil.
  5. Grease each sheet with 3-4 tablespoons of tomato sauce, then sprinkle 150 g of cheese and a little oregano. Sprinkle sliced ​​mushrooms, quite a lot (as seen in picture 8), because they will decrease when baked. Move the pizza in the oven tray (or on the grill), using the baking paper.
  6. Bake pizza at 250C for 5 minutes, then move on the grill and leave until the edges are brown (approx. 5 minutes, but watch the pizza during this time not to burn).
  7. It is well served immediately, while it is hot. If you want it to be fresher, sprinkle arugula on top, and if you want meat, place a few slices of prosciutto on top.
