A combination that definitely won me over ....
- 5 eggs
- 5 tablespoons sugar
- 7 tablespoons flour
- 1/2 sachet baking powder
- 3 tablespoons oil
- 1 tablespoon topped with cocoa
- 250 g butter or margarine
- 150 g powdered sugar
- 1/2 ampoule of rum essence
- 1 tablespoon cocoa
- 3 tablespoons vanilla powdered sugar
- 3 teaspoons cocoa
- 3 teaspoons oil
- boiled water
- cherry juice
- frozen cherries or compote
- large grated white chocolate
Preparation time: less than 120 minutes
RECIPE PREPARATION Chocolate and cherry cake:
Wheat: the egg whites are separated from the yolks. Whisk the egg whites with a pinch of salt and sugar. Rub the egg whites with oil. Mix the two compositions, then incorporate the cocoa and the sifted flour with the baking powder. Line a 17/25 cm tray with baking paper and pour the composition into it. Bake for about 20-25 minutes. Leave to cool.
Cream: mix the butter with the powdered sugar until a frothy cream is obtained. Add the rum essence and let it cool.
Assembly: the top is cut in half lengthwise and syruped with cherry syrup. Put all the cream between them. Pour the icing prepared from all the ingredients in a thin layer on top (boiled water is enough to obtain a cream that flows ..... about 3-4 tablespoons). Garnish with cherries and grated chocolate.
Cherry syrup can be concentrated or diluted with water.
