Beat the egg whites at low speed until they get some consistency, then increase the speed of the mixer to medium until it becomes a hard composition ..which remains on the blades. Add the sugar, one tablespoon at a time, while the composition is beaten at high speed, until which obtains a meringue texture, glossy and consistent. Add vanilla essence and mix.

Line the trays with baking paper and place the meringues with some space between them because they will grow when baked.

Put the tray in the oven over low heat and keep the door open for 45 minutes 'to dry (it should not turn yellow)'. Remove when cooled.

The meringues are normally decorated with pos, but this time I didn't have them :( so I made spoons with a spoon.:>
